~ Tea Sandwiches ~

 

Honey Ham Watercress Sandwiches

4 slices of white bread

4 Tbs. cream cheese with chives

4 thin slices of honey baked ham

2/3 cup sprigs watercress, fresh (remove thick stem)

16 dried apricots

 

1. Spread the cream cheese on the bread.

2. Put the ham  and watercress in between bread and slice off crusts

3. Cut into 16 triangles

4. Spread small dab of cream cheese on top of each sandwich, top with apricot piece

 

The sweetness of the apricot, with the honey ham and the crisp watercress makes this sandwich an excellent choice for tea.  Serves 8 for tea.

 

 

~ Scones ~

 

Maple Nut Scones with Streusel topping

2 cups flour

2 Tbs. packed brown sugar

2 tsp. baking powder

¼ tsp. salt

½ cup firm butter or margarine

½ cup chopped nuts

1/3 cup pure maple syrup

1 egg

about 2 Tbs. milk

extra milk for brushing scones before baking

 

1. Heat oven to 400°.

2. Mix flour, brown sugar, baking powder, salt in a large bowl

3. Cut in butter, until mixture looks like fine crumbs

4. Stir in nuts, maple syrup, egg

5. Add enough of the 2 tablespoons milk so dough leaves side of bowl and forms a ball

6. Turn dough onto lightly floured surface, gently roll in flour to coat and knead 10 times lightly

7. Pat or roll into 8-inch circle on ungreased cookie sheet

8. Brush with some milk

9. Sprinkle with Streusel topping (recipe to follow)

10. Cut into 8 wedges but do not separate

11. Bake for 16-18 minutes until golden brown

12. After they are done, remove from cookie sheet right away and separate into wedges.

 

These are delicious when served warm right from the oven!

 

Streusel Topping

3 Tbs. flour

2 Tbs. sugar

2 Tbs. finely chopped nuts, toasted

2 Tbs. firm butter or margarine

 

Mix flour, sugar, nuts in a small bowl.  Cut in flour until crumbly.  Top this on your favorite scone recipe, sliced apples, or fruit filling.  Bake according to directions.

Lemon Cream Cheese Scones

2 ¼ cups flour

¼ cup sugar

1 Tbs. grated lemon peel

2 tsp. baking powder

¼ tsp. salt

1/3 cup firm butter or margarine

3 oz. cream cheese softened

1 egg

1/3 cup milk

lemon juice

sugar

 

1. Heat oven to 400°.  Mix flour, ¼ cup sugar, lemon peel, baking powder and salt in large bowl

2. Cut in butter until mixture looks like fine crumbs

3. Mix cream cheese and egg in small bowl until smooth.  Slowly stir in milk

4. Stir cream cheese mixture into flour mixture until dough leaves side of bowl and forms a ball

5. Drop dough by 8 spoonfuls about 2 inches apart onto ungreased cookie sheet

6. Brush with lemon juice, sprinkle with sugar

7. Bake at 16-18 minutes or until golden brown. 

8. Immediately remove from cookie sheet.  Serve warm.

 

 

 

~ Beverages ~

 

5 Spice Indian Chai

 

2 cups water

2 cups milk

4 Darjeeling tea bags

½ tsp. vanilla

1 cinnamon stick

¼ tsp. ground ginger (or 1 inch of fresh ginger)

1 dash of ground nutmeg

5 whole cloves

¼ tsp. cardamom (or 2 whole cardamom pods)

sweeten with honey, sugar or sugar substitute

 

In saucepan, bring water to boil.  Add Darjeeling tea, vanilla, and spices.  Simmer until tea is quite dark.  Add milk and bring back to a boil.  Remove tea bags and strain tea through sieve into warmed cups.  A great tea for a cold wintry day by the fire.  Sometimes I like the chai to be even stronger so I make it with 5 teabags instead.  Serves 2.
